DESCRIPTION:
As part of a high school project, the son of a food plant worker videotapes the typical day of a maintenance crew. The tape, which shows maintenance workers committing a string of common GMP violations, eventually emerges as the centerpiece of a staff meeting. When they see themselves on tape, the maintenance workers are stunned to realize that they have a tremendous impact on product safety. The key GMPs addressed in the video include good personal hygiene, cross-contamination from improper traffic patterns, and the danger of temporary repairs that can lead to the formation of microbial niches.
